Hello readers! It has been such a long time since last post, I really didn't think I would be this infrequent with my posting. On the other hand I have really not thought about blogging, I've been quite busy lately, but it's a lot of fun regardless. The only downside is that I do get a lot less free time. But last week I got a cold, and I was home from school today. This weekend I made these mint chocolate truffles and here is the recipe (in Swedish). They were really delicious, so today when I didn't have anything else to do I decided to make a post about it.
Since it's almost Christmas too, I thought it might be good to post something edible. I'm also going to try really hard and blog these six days leading up to Christmas, but it is a loose promise though.

Decorated mousse
Hello readers! Quite a while ago I mixed some ordinary powder mousse in two flavors, chocolate and lemon i believe. Then I layered them in a nice glass and topped it off with some chocolate and berries. I thought I had already shared the photos with you, because this was almost a month ago, but going back I could not find the post and I never crossed over the little note I made to myself to remember what photos I wanted to put in the post. So here they are, it's just a simple decorated two layer mousse.
I don't think it turned out great, but I guess I can just post it anyway, because if nothing else I do enjoy looking back on my previous posts and see what I did when and so on. So I can admit that some posts - like the one where I graduated - is mostly just for myself to look back on. The photo quality was terrible etc. but that was not the point of the post so it was okay.

Roy Fares - Espresso Cake
Hello everybody! This past week I have spent a lot of time trying to make an espresso cake. The recipe is from Roy Fares book United States of Cakes (link to the book on Bokus) and it was time consuming to make the cake, but everyone that ate it seemed to very much enjoy it. I baked the cake itself this Thursday, made one of the fillings on Friday and the next filling on Saturday. On Saturday I also put the cake together and today I did the decoration and we ate it.

Midsummer
Good evening readers! Today is the Swedish holiday midsummer. It usually rain to some degree, but today has been surprisingly nice for once. Last year I was just recovering from eating something very bad, but this year everything was good. I did write a little bit about midsummer in last years midsummer post. Last year I just posted some photos of the cake, but this year I changed it a little to make it more interesting. First of all, I was playing around with shapes in photos and I found it interesting to put a round bouquet in a square tile. The flower arrangement in the photo is also made by my mum for midsummer, so it goes together. The second photo is this years cake. I love, love, love the strawberry cake my mum makes for midsummer. It's my favorite cake of all cakes and it's so delicious.
Anyway, back to the photos. The third photo is just Maja laying outside and having a good time. She was just laying there, napping, looking at people in their gardens, eating some and hunting flies. I thought she looked cute just being relaxed and all. And that pretty much sums up this years midsummer! :)

Sticky banana&chocolate cake
Hi readers! Today I want to share a delicious sticky cake with banana and chocolate. I topped mine with a sliced strawberry and caramel sauce. Inside it was bits of molten chocolate and the banana gave a creamy texture to the cake. It was my mum who made it, I only decorated and took the photos, but it was really delicious. I also really liked the photos, the lighting was perfect and the white plate didn't give any kind of weird reflection - that can be a big problem sometimes. To be honest, I don't know if the cake itself or the photos were best.

Fast and easy bread
Hello readers! Today I wanted to share with you a bread recipe. I'm usually just putting sweets and things like that in the Eat and recipes category, except for that one noodle soup I did one time. But today I'm going to share a fast and very easy bread. I've done these breads quite a few times now, I started of doing them from a kind of base recipe I found on the internet, but then I've eventually changed it, and it's now my own recipe down below.
For gluten free bread, use gluten free flour. For more of a wholemeal bread, change part/all plain flour to whole wheat flour and use a little less water.
35g butter
350g water (3,5dl)
50g fresh yeast or 12g dried yeast
½ teaspoon salt
2 teaspoons sugar
1 tablespoon olive oil
510g plain flour (8,5dl)
How to do it:
1. Melt the butter. Then add the water to the melted butter and heat/cool until the mixture is 37°C (98,6°F), then add it to a big bowl. Crumble the yeast into the same bowl. Stir until the yeast is completely dissolved.
2. Add in the salt, sugar and olive oil and a little bit of the flour. Stir everything together and keep adding in the flour until you can knead the dough without it sticking too much to your hands. (You probably won't need all of the flour!)
3. Knead the dough for 5min, then let it rise for another 5min.
4. Divide the dough into 16 pieces and roll them to buns. Put the buns on a baking tray with nonstick baking paper on cover them.
5. Turn on the oven to 250°C (482°F).
6. Let the buns rise for 15min while the oven heats up.
7. Put the bread in the middle of the oven for 7min.

Sweden's National Day
Hello everybody! Today, 6th of June is Sweden's National Day and we usually eat a little pastry, mostly with strawberries, on this day. This year my mum made a pastry called "nationaldagsbakelse", and that can be directly translated to "national day pastry". Last year we ate a fresh strawberry pastry, and that was also very good. But I really love this years pastry, it tastes delicious. The base tastes like almond paste and I love almonds, so it's perfect. It was topped with a strawberry dipped in chocolate and a lemon balm leaf.

Sponge cake with raspberries & blueberries
Hi readers! I promised to post today, so I'm going to share this recipe of a delicious sponge cake with raspberries and blueberries, with vanilla sauce if you like. It's perfectly fine without the sauce too, but it just slightly better with vanilla sauce in my opinion.
2 eggs
1 cup sugar
1½ cup flour
1 teaspoon baking soda
1 teaspoon vanilla sugar
½ cup milk
50g melted butter (not too hot!)
150g raspberries and/or blueberries (or other berries)
Optional toppings:
Vanilla sauce
Ice cream
Berries
How to do it:
1. Put non-stick baking paper in square baking tray or coat it with butter.
2. Beat the egg and sugar until it's white and fluffy.
3. In a separate bowl, mix the flour, baking soda and vanilla sugar.
4. Pour the milk and butter into the eggs and beat it. Then gradually add in the dry ingredients into the same bowl. Lastly fold in the berries. After that, put your mixture into your baking tray.
5. Bake in oven for 28-30min.
Oven: 175°C
Serves: 10

Nature and a donut
Hello readers! Today I was with my friend and we took a short walk around his neighborhood and I took some photos of things we walked past. We also went to the yearly spring market where I brought a donut and a bag. And it just so happens that I took a photo of this donut before I ate it, so I'm just going to put it in the post too, haha. But I mean, it was a great donut so why not?
Last but not least, I know yesterday was supposed to have been the day I posted, so to make up for this I'm going to make another post tomorrow just because I missed yesterday. It would be a bit unnecessary to make two posts in one day, so I just thought posting two days in a row would be the best alternative.

Chocolate squares topped with coconut
Hi everybody! It's been some time since I made a post about something I've baked. These chocolate squares are very delicious, they are topped with a chocolate frosting and coconut flakes. I found these photos, forgotten in an unnamed folder on my computer. The idea when I took the photos must have been to post them right away, but that didn't happened. American lemon meringue pie
Hi everybody! Last summer I made one of my favorite pies ever, the American lemon meringue pie. The pie itself is basically a lemon curd in a pie shell with meringue on top. It's very delicious! Anyways, back to last summer. I made a pie then - and forgot to add meringue to the title for some reason - but the photos of it were not that great because I covered the pie in meringue so that you couldn't see the yellow lemon curd. So when I, last week, made another pie I thought that it might be fun to share the photos of this pie too. Just because you will get a better view of the lemon curd. Also I piped the meriengue better this time, and I think the pie overall looks better now.

American pancakes
Hello everybody! It was a couple of weeks since I made my last post with something edible, so I thought today might be a good time to make another post. This time it is American pancakes. I topped mine with raspberries and a bit of powdered sugar, but you can really eat them with anything you want. They will be delicious either way.

Easy noodle soup
Hello readers! Today in school we made a very easy noodle soup and I really liked it. I took a couple of photos (with my phone and not my camera this time) and decided to share the recipe with you. And yes, I decided to post today because I couldn't post anything on Tuesday. The soup is really great and you can change the spices and vegetables for your own liking, this is just the recipe I followed when we made it.
1 carrot
20g of leek
120g noodles
250g chicken breast
salt
pepper
cayenne pepper
1 chicken stock cube
5 cups of water
1 teaspoon of butter
2. Heat up a casserole or pot and melt the butter until it's starting to turn golden.
3. Add the sliced vegetables and chicken to the pot and fry them lightly.
4. Add the water and chicken stock cube and bring the water to a simmer.
5. Simmer for around 5 minutes.
6. Add two pinch salt, four pinches of pepper and one pinch cayenne pepper (and other spices too if you would like).
7. Taste and add more of something if you would like that.
8. It's ready to eat!

Valentine's day cupcakes!
Hi readers! I know, valentine's day was yesterday and I haven't blogged in about a week. It was because of my birthday I didn't blog, I totally forgot about the blog during last week. And I was going to post this yesterday but the lighting was so bad that I couldn't get any good photos at all. So I waited one day instead and decided to post the valentine's day cupcakes together with the cupcakes from my birthday.
All of these cupcakes are mini-cupcakes. The pink cased cupcake has a vanilla muffin with raspberries and pink cream cheese frosting. The blue cased cupcake has a vanilla muffin and white cream cheese frosting. And last but not least: the green cased cupcake has a chocolate muffin and Nutella frosting.

Chocolate muffins with raspberries
Hello everybody! It's time for another of these posts with something I've baked. Today I've made some chocolate muffins with raspberries in them. The topping is just an ordinary creme cheese frosting. For once I actually decided to write out the recipe, something I forget most of the time. But I thought ahead and remembered to do that this time! :)
2 eggs
100g melted butter
1 cup caster sugar
1½ teaspoon vanilla sugar
a pinch of salt
4 tablespoon cacao powder
3/4 cup of flour
½ teaspoon baking soda
1 cup raspberries
How to do it
1. Turn on the oven to 200°C.
2. Melt the butter and let it cool.
3. Whisk the eggs and sugar until it's fluffy.
4. Mix all of the dry ingredients in a separate bowl. Sift in the cacao powder.
5. Mix the dry ingredients with the egg and sugar.
6. Fold in the raspberries.
7. Add the melted butter to the mixture and fill up 15 muffin cups with the mixture.
8. Bake for around 15-20min.

1 tablespoon vanilla sugar
How to do it
1. Beat the butter until smooth and gradually add in the powder sugar and vanilla sugar.
2. Add the cream cheese and mix until the mixture is smooth.
3. Put the frosting in the fridge for at least 1 hour before piping it onto your muffins. (You have to wait until the muffins are cooled before piping or the frosting will melt.)

White chocolate cheesecake!
Hi readers! I feel like it's been a wile since I made a post with something I've baked, so I decided today could be a good day to post something like that. This is a white chocolate cheesecake, made after my grandmothers recipe. It was delicious and I made two of them. But it was really long ago, in late December if I remember correctly.
More photos of cute little Molle is coming up, the next post is going to be about him again since I still have a lot of photos left. The snow is melting away, it's starting to get grey outside again. It's a bit sad but I don't think this is the last we have seen of the snow this winter, it's probably going to snow more later.

Almonds
Hi everyone! This post was originally going to be more snow photos but I really didn't feel like going outside today because it was so cold and ice everywhere. Then I decided to take some nice photos of the evening sky, and my photos turned out blurry because I had forgot to fix the focus and then my camera ran out of battery... So I didn't have any photos for today since it's too dark to go outside right now.
Instead I found these couple of photos of almonds. The photos are from December and I didn't post them because I felt like it was a bit weird. I couldn't find any other photos to go with these two. But here they are!

Christmas candy!
Hi everyone! It's soon Christmas and today I wanted to share with you, some of my favorite Christmas candy. This is all home made and delicious. I really can't get enough of it. And if you want to see more of Christmas candy I recommend you to check out this post about fudge and last years post about Christmas treats.
Now, moving on to what you can see in the photos. It's my mum's saffron truffle with white chocolate that can be seen as yellow balls coated in coconut sprinkles. The chocolate thing in shiny metal cases, in green, yellow and silver, are ice chocolate with a hazelnut. And last but not least, in the purple cases there is a toffee caramel with chopped almonds.
